TRACEABILITY
The cooperative was established in 2012 as part of a Technoserve initiative to improve the livelihoods of local coffee farmers and generate quality premiums through the establishment of improvements in the process. In addition to the Biftu Gudina washing station, new roads were built to facilitate coffee transportation, new processing equipment was purchased and an innovative waste water filtration system was installed.
The process begins with the selective harvest of ripe cherries only, the farmers sort the ripest cherries before starting production. A Penagos pulper removes the skin, pulp and mucilage. This machine removes most of the mucilage without the need for fermentation, although the coffee is also fermented using the leftovers of sugar (mucilage) remaining in the parchment.
After the coffee is washed and graded by density in the washing channels, it is soaked in clean water for approximately 10 hours. Drying and sorting begin in the shade for a couple of days, and then final drying continues under the sun on African beds for about 12 days.
